The Easy Unlocks

Baby Daisy requires you to get a 1-Star rank or better on all 50cc Wii Grand Prix Cups. It sounds hard, but at 50cc, the AI is basically asleep.

The Grind-Heavy Unlocks

Baby Luigi is a pain. You have to unlock 8 Expert Staff Ghosts in Time Trials. This means you have to be fast. Like, actually fast.
Toadette is another weird one. You have to play Time Trials on all 32 courses. You don't even have to win; you just have to finish them.
Dry Bowser is the ultimate trophy. You need a 1-Star rank or better on all 150cc Wii Grand Prix Cups. If you've ever been hit by three Red Shells at the finish line, you know the pain of this challenge.

The Rosalina "Shortcut"

There is a famous trick for Rosalina. If you have a save file for Super Mario Galaxy on your Wii, you unlock her almost immediately after a few races.
