I've discovered that I absolutely love doing pixel art, but struggle to figure out what to actually make pixel art of. It's especially upsetting because I want to practice and get better, but find myself stuck.

Welcome to Pixelation :)
You can draw inspiration from many things.
- do studies of objects that you find in your home
- pixel a scene from a fairytale or a book you read
- what I like to do is to pick one of those "30-day" poetry or photo challenges : each day you have a different word or sentence to draw inspiration from!
- remake another pixel artist's piece in your own style (or try to copy theirs, there's much to learn from copying someone else's style)

Hmm, I've Been there :P,
Maybe consider checking out a website called Pinterest.com --- it's basically a visual library of practically anything you search. Which should help solve your inspiration issue.
Secondly, make sure what you draw from the inspiration, are stuff you enjoy for now... until you get the hang of knowing how to use reference. Because it may get boring, who knows.. Worse thing is getting stuck, either doing things you don't enjoy or not knowing how to draw the things you can't imagine. (basically without inspiration/reference) :P

I follow a lot of pixel artists on twitter. Check the #pixelart tag, see who's cool and follow. They'll often retweet other good pixel artists too

usually I put my emotional traumas into it, to be as candid as possible. I like drawing a lot of really weird scary-looking nonsense, the creepier the better.

Check out Pixel Dailies on Twitter. There's a theme to paint every day and you can see how a lot of other people approach it.
