16x16 is pretty small.  I'd suggest going for 32x32.  These are a few great sprites.  I will post more when i find some good ones.

Last sheet is edits from the Final Fantasy. So, it would be better to look at originals before/instead http://www.videogamesprites.net/

16x16 generally tend to be very boxy (with like 12 or more for the head and barely a body underneath. Although it's low-color (3 total) a lot of the original Game Boy B&W games had some pretty solid mini-sprites. I believe Mario Land featured a 10x10 Mario (back before every Gameboy sprite was so damned huge). The Boktai sprites have an amazing amount of detail and personality for their size and low color count:

The handheld Zelda games also do very well with tiny sprites:

gbc's metal gear solid had some awesome sprites, i think the total height was like 24 pixels, and the sprite had real-ish proportions.

I've always wondered why sprites are 90% anime

That's because most snes/ nes/ gb/ gba/ genesis/ *insert random console name here* games come out of japan.

My guess, in all honesty, is because when working with such a little place, you have hardly enough room for details to make them look any more realistic than anime. Small eyes to fit the proportion of a head don't normally look right, big eyes make them more noticable for expressions and so on. As for anime designs of hair and clothes and so on. I guess the same thing, small spaces have small room to make the average human hair and such different from the next sprite, so they go to the extreme to make them different. That's just my opinion though.
