I've never done sand before so I don't know how to pixel it. I'm having the most trouble where there are no dunes, it's just kinda bland. I've tried a few different ways to shade it but it's too embarrassing to post. If someone could help me, that would be great. Thanks ;D

There's no way you can pixel sand (I think), only thing you can do is suggest sand by pixelling good-looking dunes (mostly) and other stuff (maybe).
Step one: get a good idea of the many ways dunes look like (http://www.flickr.com/search/?q=dune).

You have the right approach with the two dunes on the top-right. The two on the left are unreadable. All you need is shapes & light - if you focus on details during the construction stage, rather than shapes & light, it won't work out.
Where there are no dunes, you can just have shallow slopes - slight changes of value.
Here (http://www.pixeljoint.com/pixelart/40107.htm)'s a favourite of mine.
I like the design of the ostrich. What you've done on the legs & neck they call selout (search the forum), & I personally don't favor it. It's the process of placing AA flawlessly but then undermining it by using the wrong values for some reason.
I'll follow this piece's progress with interest.
